Pumpkin Protein Pancakes

Pumpkin is high in fiber, vitamin A and betacarotene. Even though this squash is seasonal to fall, it has amazing health benefits including aiding with weight control and even improving eye health. Give this healthy breakfast option a try!

The below is for a single serving.  Feel free to adjust quantities if meal prepping multiple days.

Ingredients

  • Greek Yogurt (Low-Fat) – 47.23 gram, or about 0.25 Cup(s)
  • Oats (Uncooked) – 71.64 gram, or about 1 Cup(s) Dry
  • Baking Powder – 0.39 teaspoon
  • Egg (Uncooked) – 39.36 gram, or about 1 Large Egg(s)
  • Skim Milk – 2.36 tablespoon, or about 0.25 Cup(s)
  • Vanilla Protein Powder – 18.89 gram, or about 0.5 Scoop(s)
  • Vanilla Extract – 0.79 teaspoon
  • Canola or Vegetable Oil – 0.51 tablespoon
  • Pumpkin (Canned) – 3.15 ounce, or about 0.25 Cup(s)

Instructions

  1. Add the greek yogurt, oats, milk, egg, protein powder, vanilla extract, canola oil, baking powder, and canned pumpkin to the blender. Blend well until the oats are fully broken down and you have a frothy and smooth batter.
  2. Let the batter sit for 5-6 minutes to thicken up. (This is an important step so you don’t have watery pancakes)
  3. Heat a skillet to medium heat and spray with cooking spray. The skillet needs to be nice and hot before you start cooking the pancakes.
  4. Once the skillet is hot and the batter is thickened, you are ready to measure out and pour your pancakes. You can just directly pour the batter into the skillet from the blender until you have the desired size you want, or you can use a measuring cup to measure out each pancake.
  5. The pancake will be ready to flip when the edges start to come off the pan and bubbles start to form on top of the pancake. This will take about 1-2 minutes for the first one.
  6. After you flip each pancake they will need about 1 more minute of cooking.
  7. Make sure to respray the skillet with cooking spray after each pancake. They might start to cook faster after the first one, so watch them closely. Repeat until you have used all your batter.
